Whether you’re trying to save dollar, have a deadline or simply wanna try something different, these cheap n’ cheerful meal prep ideas will last you the full week. And even better: they won’t cost you the earth.

1. Fajitas

An ultimate go-to for any Mexican food lover! You can even buy the fajita making kit to save time – just add chicken, veg, a sauce sachet and you’re good to go. And it will last you all week ‘fo sure. Go full veggie instead if you’re really on a budget.

2. Tuna Nicoise

= The posh term for tuna, potatoes, egg and salad (but sssh!). Simply boil the potatoes, prepare the salad (green beans, tomatoes, cucumber, whatever you fancy) and crack open the tuna. MMM-HMM!

3. Pesto Pasta

Pesto and Pasta… what else! And if you’re feelin’ fancy, add some grated parmesan and chopped bacon! Simple, fulfilling and yummy AF.

4. Chicken and Chickpea salad

Sliced grilled chicken, salad and a tin of chickpeas = one scrummy meal. Season with coriander, salt and pepper for an extra ‘lil somethin’. If you’re veggie why not try Quorn as an alternative?

5. Stuffed peppers

Have some left over veg you just don’t know what to do with? Chop your mismatched veg into tiny chunks, add a bitta’ sweet chilli sauce and some cous cous. Cook for 20-25 minutes and season with chilli and garlic for some extra pizazz!
